  • 1 cup green or brown lentils
  • 1 cup rolled oats
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 cup ketchup
  • 1/2 cup chopped walnuts or sunflower seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with olive oil or line it with parchment paper.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until soft (about 5-7 minutes). Add minced garlic and cook until fragrant.
  3. Rinse lentils under cold water, then combine with vegetable broth in a pot. Bring to a boil, reduce heat, and simmer until tender (20-25 minutes).
  4. In a large bowl, mix cooked lentils, sautéed onion and garlic, oats, spices, ketchup, and optional nuts/seeds until well combined.
  5. Transfer the mixture into the prepared loaf pan, pressing down firmly for an even surface. Top with additional ketchup if desired.
  6. Bake for 45-50 minutes until firm and golden brown on top. Allow cooling slightly before slicing.
