- 1 cup green or brown lentils
- 1 cup rolled oats
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups low-sodium vegetable broth
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 cup ketchup
- 1/2 cup chopped walnuts or sunflower seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with olive oil or line it with parchment paper.
- In a skillet over medium heat, sauté the chopped onion in olive oil until soft (about 5-7 minutes). Add minced garlic and cook until fragrant.
- Rinse lentils under cold water, then combine with vegetable broth in a pot. Bring to a boil, reduce heat, and simmer until tender (20-25 minutes).
- In a large bowl, mix cooked lentils, sautéed onion and garlic, oats, spices, ketchup, and optional nuts/seeds until well combined.
- Transfer the mixture into the prepared loaf pan, pressing down firmly for an even surface. Top with additional ketchup if desired.
- Bake for 45-50 minutes until firm and golden brown on top. Allow cooling slightly before slicing.
