Ingredients

  • 4 small pumpkins (about 11.5 lbs each)
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 1 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the pumpkins thoroughly and slice off their tops.
  3. Scoop out the insides to create bowls.
  4. Spoon pizza sauce into each pumpkin until halfway full.
  5. Layer in mozzarella cheese, followed by pepperoni slices and diced vegetables.
  6. Sprinkle Italian seasoning over the top and drizzle with olive oil.
  7. Place the stuffed pumpkins on a baking sheet and bake for about 25-30 minutes until tender and bubbly.
