Ingredients
- 4 medium bell peppers (2 orange, 2 green)
- 1 lb ground beef (or turkey)
- 1 cup cooked rice
- 1 small onion (finely diced)
- 1 cup tomato sauce
- 1 cup shredded cheese
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add ground meat and cook until browned.
- Stir in cooked rice, tomato sauce, garlic powder, cumin, salt, and pepper. Mix until combined.
- Stuff each bell pepper with the meat-rice mixture; press down gently.
- Top with shredded cheese and place in a baking dish. Cover loosely with foil.
- Bake for about 30 minutes; remove foil during the last 10 minutes for melted cheese.
