- 1/2 cup pure honey
- 2–3 chipotle peppers in adobo sauce (adjust to taste)
- 1 medium yellow onion, chopped
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 8 soft corn tortillas
- Fresh cilantro for garnish
Instructions
- Trim excess fat from the beef chuck roast and season generously with salt and pepper.
- Heat oil in a large skillet over medium-high heat and sear the beef on all sides until golden brown.
- In a blender, combine honey, chipotle peppers, garlic, cumin, and a splash of water; blend until smooth.
- Place the seared beef in a slow cooker, pour the sauce over it, add onions, cover, and cook on low for 8 hours or high for 4 hours until fork-tender.
- Shred the beef using two forks and return it to the slow cooker to soak up more sauce.
- Warm tortillas in a dry skillet; fill each with the shredded beef and top with fresh cilantro before serving.
