  • 1 cup fresh carrots, diced
  • 1 cup frozen peas
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 sheets puff pastry (store-bought)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Dice chicken into bite-sized pieces. In a large skillet over medium heat, melt butter and sauté chicken until browned (7-10 minutes).
  3. Add carrots, celery, and onion; sauté until onions are translucent (about 5 minutes).
  4. Pour in chicken broth and heavy cream; stir in thyme and rosemary. Simmer until slightly thickened (3-5 minutes).
  5. Stir in frozen peas and mix well.
  6. Roll out puff pastry over a pie dish filled with the mixture; cut slits in the top for steam.
  7. Bake for 25-30 minutes or until golden brown.
