  • 1 cup heavy cream (or milk for a lighter version)
  • 4 slices cooked bacon bits (optional)
  • 2 tsp dried thyme (or 1 tbsp fresh thyme)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and dicing the potatoes.
  2. Optional: Sauté the onions in a skillet over medium heat until translucent, about 5 minutes.
  3. Add sautéed onions (if used), potatoes, corn, broth, thyme, salt, and pepper to the crockpot. Stir to combine.
  4. Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
