  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1 cup blue corn tortilla chips, crushed
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cools, prepare the cherry tomatoes by halving them and chop the fresh basil.
  3. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and crushed tortilla chips.
  4. In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  5. Pour the dressing over the pasta mixture and gently toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
