  • 9 oven-ready lasagna noodles
  • 1 lb Cajun sausage (spicy or smoked)
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tbsp Cajun seasoning
  • 2 cups fresh baby spinach
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1 medium onion (chopped)

Instructions

  1. Preheat the oven to 375°F (190°C). Gather all ingredients.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until golden brown.
  3. Add Cajun sausage and cook until browned. Stir in spinach until wilted.
  4. In a bowl, mix ricotta, half mozzarella, Cajun seasoning, salt, and pepper until smooth.
  5. In a baking dish, layer sauce from the sausage mixture, noodles, cheese mixture, and sausage mix; repeat layers.
  6. Top with remaining mozzarella and sprinkle Parmesan cheese. Cover with foil.
  7. Bake for 25 minutes covered; remove foil and bake another 15 minutes until bubbly.
