  • 8 oz fettuccine
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once hot, season shrimp with salt and pepper and sauté until pink and opaque, about 3-4 minutes per side. Remove from skillet and set aside.
  3. Lower the heat slightly; add minced garlic to the skillet and cook until fragrant, about 30 seconds. Stir in lemon juice and let bubble for a moment.
  4. Pour in heavy cream, stirring well. Simmer gently until slightly thickened, about 3-5 minutes.
  5. Add cooked fettuccine to the sauce, tossing until evenly coated. Off heat, sprinkle with Parmesan cheese and parsley before serving.
