- 2 tbsp fresh lime juice
- 2 tsp chili powder
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Marinate chicken in olive oil, lime juice, chili powder, salt, and pepper for at least 30 minutes.
