  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 2 tsp chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate chicken in olive oil, lime juice, chili powder, salt, and pepper for at least 30 minutes.
  2. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through.
  3. Allow chicken to rest for 5 minutes before slicing into bite-sized pieces.
  4. In a large bowl, combine black beans, corn, tomatoes, avocado, onion, and cilantro. Mix gently.
  5. Top with sliced chicken and drizzle with extra lime juice. Season with salt and pepper before serving.
