Christmas bark is a classic holiday treat that combines salty crackers with sweet toffee and chocolate. It has a wonderful crunchy texture and a satisfying sweet-and-salty flavor profile.

This recipe comes together quickly with just a few pantry staples. It's a great option for a last-minute party contribution or an easy edible gift for friends and neighbors during the holiday season.

Why this works

  • No special equipment needed: All you need is a saucepan and a baking sheet to make this candy.
  • Quick cooking time: The bark bakes in just a few minutes, and the hands-on time is minimal.
  • Easy to customize: You can change the type of chocolate, add nuts, or use different sprinkles to make it your own.

Ingredients you'll need

A baking sheet lined with saltine crackers, covered in bubbly toffee.
Ingredients for Christmas bark: crackers, butter, brown sugar, chocolate chips, vanilla, and salt.
  • Crackers: Saltine crackers provide the classic salty, crunchy base. You could also use club crackers or Ritz crackers if you prefer.
  • Butter: Unsalted butter gives you control over the saltiness. If you only have salted butter, you can use it and omit the added salt in the toffee.
  • Brown Sugar: Light brown sugar creates a classic caramel-like toffee. Dark brown sugar will also work and result in a deeper molasses flavor.
  • Chocolate: Semi-sweet chocolate chips balance the sweetness of the toffee. Milk chocolate, dark chocolate, or white chocolate chips are also great options.

How to make it

Step 1: Prepare the Cracker Base

First, get your oven ready by preheating it to 400°F. While it heats, line a large baking sheet with parchment paper. Arrange a single layer of saltine crackers on the prepared sheet, fitting them closely together to cover the entire surface.

Step 2: Cook the Toffee

Next, make the simple toffee. Combine the butter and brown sugar in a saucepan over medium heat. Bring it to a boil and let it bubble for 3 minutes, stirring constantly. Once it has thickened, remove it from the heat and stir in the vanilla and salt.

Step 3: Bake and Add Chocolate

Pour the hot toffee mixture over the crackers and spread it evenly. Bake for about 5 minutes, until the toffee is bubbly. Remove from the oven and immediately sprinkle the chocolate chips over the top. Let them sit for a few minutes to melt.

Step 4: Spread, Chill, and Serve

Use a spatula to spread the melted chocolate into a smooth layer. Transfer the baking sheet to the refrigerator and chill for at least an hour. Once the bark is completely firm, break it into pieces and it's ready to serve.

This sweet treat is a wonderful addition to a holiday dessert table, alongside Christmas Cookies and a warm mug of Christmas Punch.

Storage and reheating

Store the Christmas bark in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze it for up to 2 months; place wax paper between layers to prevent sticking.

FAQ

Why did my toffee separate?

Toffee can separate if it's cooked at too high a heat or not stirred enough. Use medium heat and stir constantly while it boils for the recommended time to help the butter and sugar emulsify properly.

Can I use different crackers?

Yes, this recipe is very flexible. Club crackers, Ritz crackers, or even pretzels or matzo crackers can be used as the base.

My chocolate chips didn't melt smoothly. What happened?

If the chocolate chips don't melt fully from the residual heat, you can place the pan back in the warm (but turned-off) oven for 1-2 minutes to help them along before spreading.

Ingredients

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 10x15-inch rimmed baking sheet with parchment paper, making sure the paper goes up the sides slightly.
  2. Arrange the saltine crackers in a single, tight layer on the parchment paper, covering the entire bottom of the pan.
  3. In a medium saucepan, combine the butter and brown sugar. Cook over medium heat, stirring until the butter is melted and the sugar is dissolved.
  4. Bring the mixture to a rolling boil and cook for exactly 3 minutes, stirring constantly. The mixture will thicken.
  5. Remove the pan from the heat and carefully stir in the vanilla extract and salt.
  6. Immediately pour the hot toffee mixture over the crackers. Use an offset spatula or the back of a spoon to quickly spread it into an even layer, covering all the crackers.
  7. Bake for 5 to 6 minutes, or until the toffee layer is bubbly across the entire surface.
  8. Remove the pan from the oven and place it on a heat-proof surface. Sprinkle the chocolate chips evenly over the hot toffee. Let it stand for 5 minutes, which will allow the chips to melt.
  9. Use the offset spatula to spread the melted chocolate into a smooth layer. If desired, add sprinkles or a light dusting of sea salt. Refrigerate for at least 1 hour, or until the chocolate is completely firm.
  10. Once chilled and firm, lift the parchment paper out of the pan. Break the bark into irregular pieces by hand or cut with a knife. Serve immediately.

Notes

  • Make sure the parchment paper goes up the sides of the baking sheet. This contains the hot toffee and makes cleanup much easier.
  • Work quickly when pouring and spreading the toffee. It begins to set as soon as it starts to cool.
  • Customize your bark with toppings like chopped toasted nuts, crushed peppermint candies, or festive sprinkles. Add them after spreading the chocolate, before chilling.
  • To get cleaner breaks, let the bark sit at room temperature for 10-15 minutes before breaking it into pieces.
